Easy Peasy Greek Salad

Not kidding, I could probably eat this every single day. And it's so simple to make!

I remember the first time I had Zoë's Kitchen. I was in college, and I ordered some basic salmon skewers. But believe me when I say the STAR of that meal was the salad (though the hummus was pretty good too). In the years following, I would have such strong cravings for not only Zoë's, but that salad in particular. I even bought the dressing from the restaurant to keep at home.
Then one day, it dawned on me: this salad is literally that, a salad. There was nothing in the meal I was paying for that I couldn't go to the grocery store, buy, and put together myself. Except of course, the dressing (which I soon found a dupe recipe for that too). While I will still stop by Zoë's to grab a meal when I'm in a time crunch, or just want to treat myself, this has saved me a lot of money over the past few years. I was so proud of myself for this simple realization, and I wanted to share this wonderful, tasty salad with you all!

Refreshing on a hot summer day, or even perfect for reminiscing on warm weather foods during the cooler months, this recipe is so perfect for any occasion. The crisp red onion, juicy cucumbers, plump tomatoes, creamy avocados, and the twang of the feta cheese and the red wine vinegar in the dressing all work together to create such a light, fresh, and nearly addicting flavor profile in every single bite. So, the recipe: Let's get into it!

Easy Peasy Greek Salad
Prep time: 15 minutes
Serves: 3-4
What you will need:
- 2 packs of cherry tomatoes (the more colorful the better)
- 2 cucumbers (Japanese have less seeds, but regular will do)
- 1/4 red onion, peeled
- 1 or 2 avocados
- 1 package of feta cheese
- Greek salad dressing (keep scrolling for a Zoë's Kitchen copycat recipe)
Optional:
- Kalmata olives
- lettuce or mixed salad greens
Directions:
Wash and dry all vegetables.
Peel cucumbers, and dice into even, bite-sized cubes.
If cherry tomatoes are bigger than bite-sized, cut in half, or into pieces that mimic the size of the cucumbers.
Chop the red onion (I prefer small dices, but this can be any size you like, depending on how strong you want the onion to be. These can also be thinly sliced).
Toss tomatoes, cucumbers, and red onion together in a large bowl.
When ready to serve, plate the tomato, cucumber, and onion mixture in a bowl.
Cut the avocado in half, remove the pit, and dice while still in the skin. Spoon out half of the avocado onto one serving. *If you don't know how to cut an avocado (no shame if you don't!), I've linked a video here, just for you*
Sprinkle the feta over each individual serving to taste (typically I use 2 heaping spoonfuls with the spoon I plan to eat with)
